Making Homemade Pasta: Tortelloni, Pappardelle, and Ravioli

The fun truly begins when you roll up your sleeves and start shaping your own pasta. We learned how to create three different kinds of pasta: delicate tortelloni, long and luscious pappardelle, and perfectly formed ravioli. Each one was unique, and the process of shaping the dough felt like an art form.

 For the ravioli, we made a homemade lemon ricotta filling that was fresh, light, and incredibly flavorful. This was the perfect touch to complement the rich, hearty ragu sauce we had simmering earlier. As we filled and cut our ravioli, the anticipation of sitting down to try our creations was building!

The Three Perfect Sauces

What would homemade pasta be without delicious sauces? After the pasta was shaped, we moved on to making three incredible sauces that would accompany our dishes. We started with the traditional ragu sauce for the pappardelle. The rich, slow-cooked flavors of tomatoes, meat, and wine were a perfect match for the wide, hearty noodles. 

Next, we created a simple yet indulgent butter and sage sauce that brought out the flavors of the tortelloni beautifully. Finally, we made a zesty lemon and chili sauce, which was light, refreshing, and paired perfectly with the homemade ravioli.

Unlimited Wine and Soda

One of the highlights of the class was the unlimited wine (if you drink, I don't so I had unlimited Diet Cokes!) that flowed throughout the experience. As we learned and laughed together, we sipped on local wines that perfectly complemented the flavors of our dishes. It was the perfect way to make the experience even more fun and social! 

The Grand Finale: Tasting Your Creations

The best part of the class? Sitting down to enjoy the fruits of our labor. We plated our homemade pasta, each dish paired with the sauce we’d made, and then dug into the delicious results. Every bite was a true celebration of Italian flavors, and we couldn’t believe we had made it all ourselves!
